Salmon with Honey Balsamic Glaze {Foodie Friday}

We're on a bit of a fish kick aren't we? Add this to the list of quick weeknight meals that your family is sure to enjoy. I love salmon because it cooks so quickly. This marinade takes 30 seconds to put together and it really kicks this dish up a notch. We try to eat salmon a couple times a month, and this recipe has made its way into our rotation.  Let’s make and eat dinner quick so we can get back outside and enjoy the sunshine!


Salmon with Honey Balsamic Glaze

Makes 2 servings

2 salmon fillets
Cooking spray


Glaze:
1 ½ Tablespoons light mayonnaise
1 ½ Tablespoons balsamic vinegar
1 tablespoon honey
1 ½ teaspoons sesame seeds (optional, I omitted)
¾ teaspoon dried oregano, crumbled
¾ teaspoon olive oil
1 medium garlic clove, minced
Thaw fillets and pat dry with a paper towel. Preheat the oven to 375 ̊F. Lightly spray a shallow baking pan with cooking spray. Spoon the mayonnaise into a small bowl. Gradually whisk in the vinegar until smooth. Whisk in the remaining ingredients except the fish. Put the fish skin side down in the baking pan. Lightly spread the glaze over the top and sides of each fillet. Bake for 12 to 18 minutes or until the fish flakes easily when tested with a fork. Refrigerate any leftovers.
