Double Chocolate Cookies {Foodie Friday}




You guys didn't make New Year's Resolutions to lose weight did you? You did? Well make these for your friends. It will help guarantee that you are 1)their favorite 2)smartest for giving away the goods.


I've been preparing some treats in preparation for Valentine's Day (i know i know) and these are one of my favorite chocolate treats. This, my friends, is not your average chocolate cookie. It's made with melted chocolate chips--no cocoa.   So addicting. Mmm.

Double Chocolate Cookies


Ingredients

4 cups semi-sweet chocolate morsels
2 2/3 cups flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs

Directions

Preheat oven to 375 degrees. Melt 2 cups morsels using the double boiler method. Stir until smooth. Remove the heat. Combine flour, baking soda and salt in medium gown. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl. Add eggs, one at a time, beating well after each addition. Beat in melted chocolate. Gradually beat in flour mixture. Stir in remaining 2 cups morsels. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 8 to 9 minutes or until cookies are puffed. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

  1. These look great and I want to eat one right now! Unfortunately, I ate too many cookies over the holidays and need to drop a few pounds first. This does look like a good Valentin's day treat. Pinning!
